Blackened Chicken Pizza with Tomato, Jalapeno and Garlic

 

 

Blackening spice blend prepared from paprika, garlic powder, coarse salt, fresh ground black pepper, onion powder, dried thyme, dried oregano, and cayenne pepper is tossed with chicken breast pieces. Chicken is blackened in hot oil until cooked through and set aside. Pre-baked pizza crust is topped with vegetable mixture of yellow-pear tomato, vine-ripened tomato, thinly sliced red onion, chopped jalapeno chili pepper, crushed garlic, chopped fresh cilantro, lime zest, and fresh lime juice. Chicken pieces are arranged over vegetables, topped with cheese, and baked until cheese has melted.

Ingredients -
1 pound Boneless Skinless, Chicken Breasts - cut into bite-sized pieces
3 tablespoons Vegetable Oil
1 Yellow Pear Tomato, trimmed and diced
1 Vine-Ripened Tomato, trimmed and diced
1/4 cup Red Onion, thinly sliced
1-2 Fresh Jalapeno Pepper, seeded and chopped
1 Garlic Clove, crushed
3 tablespoons chopped Fresh Cilantro
1 tablespoon Fresh Lime Zest
1/2 Fresh Lime, juiced
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste
1 Pre-Baked Thin Pizza Crust
1 (8 ounces) package Shredded Monterrey Jack Cheese

Blackening Spice Blend:
1-1/2 tablespoons Paprika
1 tablespoon Garlic Powder
3 teaspoons Coarse Salt
1-1/2 teaspoons Fresh Ground Black Pepper
1-1/2 teaspoons Onion Powder
1-1/2 teaspoons Dried Thyme
1-1/2 teaspoons Dried Oregano
1 teaspoon Cayenne Pepper
 
Preparation:

1. Preheat oven to 450 degrees F.

2. In a small bowl, combine blackening spice blend ingredients.

3. Add chicken breast pieces to small shallow bowl. Sprinkle spice mix over chicken breast pieces.

4. Heat a large skillet over medium-high heat. Carefully add vegetable oil to hot skillet.

5. Blacken chicken in oil for 2 to 3 minutes, or until fully cooked.

6. In a medium mixing bowl, combine tomatoes, red onion, jalapeno pepper, crushed garlic, chopped cilantro, lime zest, and lime juice.

7. Season the vegetables with coarse salt and fresh ground black pepper to taste.

8. Spread vegetables over pizza crust, and then arrange chicken over vegetables.

9. Top with shredded Monterrey Jack cheese.

10. Bake in preheated oven for 12 to 15 minutes, or until cheese melts.

Garlic contains sulfur compounds that are released when chopped. Crushing or mincing garlic results in more sulfur compounds being released than simply slicing and the more likely of a stronger flavor being imparted into the dish you are cooking.
