Cacciatore French Bread Pizza

 

 

French bread lightly toasted, and topped with pizza sauce and mixture of sautéed chicken breast, sliced onion and sliced bell pepper. Chicken mixture topped with crushed dried basil, sliced ripe olives, and shredded mozzarella cheese. French bread pizza baked until cheese has melted.

Ingredients -

1 Long Loaf French Bread, sliced in half lengthwise
1 tablespoon Olive Oil
8 ounces Boneless, Skinless Chicken Breast Meat, cut in thin strips
1 cup Sliced White or Yellow Onion
1 cup Sliced Red and Green Bell Pepper
1/4 teaspoon Salt
1 cup Pizza Sauce
1/2 teaspoon Dried Basil, crushed
1/2 cup Sliced Ripe Olives
1-1/2 cups (6 ounces) Shredded Mozzarella Cheese

 
Preparation:

1. Turn the oven to 425 degrees and preheat.

2. Place the bread on a baking sheet and bake for 3 minutes, or until toasted lightly.

3. To a large skillet, add the oil and heat over medium-high heat.

4. Add the bell pepper, onion, and chicken and season with salt.

5. Cook for 5 minutes, stirring constantly, until the chicken is cooked through.

6. Spread the pizza sauce over the bread and spread the chicken mixture evenly on top.

7. Sprinkle with basil, olives and mozzarella cheese.

8. Bake for another 6 to 8 minutes.

9. Slice and serve.
