Cashew Chicken Pizza with Pineapple

 

 

Fresh pizza dough rolled into 4 personal size pizzas. Dough topped with tomato sauce, drizzle of olive oil and sea salt. Tomato topped with sautéed chicken breast, pineapple, and cashew nuts. Pizzas baked in hot oven about 10 minutes. Hot pizza topped with mascarpone cheese and sprinkling of toasted pine nuts or sesame seeds.

Ingredients -

2-1/4 pounds Fresh Pizza Dough
Boneless, Skinless Chicken Breast, diced
Sea Salt
2 Pineapple Slices, cut in the long direction, diced
1/4 pound Cashew Nuts
2/3 pound Drained Tomato Pulp from a can
1/2 pound Mascarpone Cheese
Toasted Pine Nuts or Sesame Seeds
1/4 cup Olive Oil

 
Preparation:

1. Preheat oven to 450 F.

2. Add olive oil to small skillet. Add chicken breast pieces and sauté approximately 4 minutes. Stir in pineapple and sauté additional 2 minutes. Stir in cashew nuts. Heat through.

3. Remove skillet from stove. Remove excess oil with spoon.

4. Split dough into 4 equal pieces and make 4 small dough balls. Roll or press them into thin circles.

5. Spread tomato pulp over top of pizzas. Season with olive oil and sea salt.

6. Arrange chicken mixture over tomato pulp.

7. Bake pizzas in hot oven for 10 minutes. Remove pizzas from oven and top with mascarpone cheese.

8. Sprinkle sesame seeds or toasted pine nuts over pizza. Return pizza to oven and bake until cheese has melted, about 10 more minutes.

9. Serve hot.
