Chicken Fajita Pizza

 

 

Pizza dough rolled out, and pressed into 12-inch pizza pan. Dough baked in hot oven until light golden brown. Crust topped with mixture of sautéed chicken, chili powder, salt, garlic powder, thinly sliced onion and bell pepper. Salsa and Monterrey Jack cheese spread over chicken mixture. Pizza baked until crust is golden brown on edges and cheese has melted.

Ingredients -

1 (14 ounces) can Refrigerated Pizza Crust
1 tablespoon Olive Oil or Vegetable Oil
4 Boneless, Skinless Chicken Breasts cut into thin bite-size strips
1 to 2 teaspoons Chili Powder
1/2 to 1 teaspoon Coarse Salt
1/2 teaspoon Garlic Powder
1 cup Thinly Sliced White or Yellow Onion
1 cup Thinly Sliced Green and Red Bell Pepper
1/2 cup Chunky Salsa
2 cups Shredded Monterrey Jack Cheese

 
Preparation:

1. Turn the oven to 425 degrees and preheat.

2. Spray nonstick cooking spray on a 12 inch pizza pan.

3. Unroll the dough onto the pan and press out to the edges.

4. Bake until light golden brown, which takes about 8 minutes.

5. Heat a medium skillet over medium-high heat.

6. Add the chicken, chili powder, salt and garlic powder and cook for 4 to 5 minutes, stirring.

7. Add the bell peppers and onion and cook for another 2 to 3 minutes or until the chicken is no longer pink.

8. Spoon chicken mixture evenly over crust.

9. Spoon the salsa over the top and sprinkle with the Monterrey Jack cheese.

10. Bake until the crust is golden brown, which takes about 15 to 17 minutes.

11. Slice, serve and enjoy.
