Chicken Pizza with Artichoke Hearts and Vine-Ripened Tomatoes

 

 

Pre-baked pizza crust topped with sautéed chicken breast pieces, minced garlic, marinated artichoke hearts, vine-ripened tomatoes, dried basil and shredded mozzarella cheese. Pizza is baked until cheese has melted crust is golden brown.

Ingredients -
1/2 Pound Boneless, Skinless Chicken Breasts, cut into bite-sized pieces
1 (6 ounces) jar Marinated Artichoke Hearts, drained, reserving liquid
1 Garlic Clove, finely minced
1 (10 ounces) Pre-Baked Pizza Crust
4 Vine-Ripened Tomatoes, thinly sliced
1/2 teaspoon Dried Basil Leaves
1-1/2 cups Shredded Mozzarella Cheese
 
Preparation:

1. Preheat the oven to 425 degrees F.

2. Coarsely chop the artichoke hearts.

3. Add artichoke liquid to large skillet. Bring to boil over high heat. Reduce to medium, cook and reduce liquid for about 1 minute.

4. Add chicken pieces and finely minced garlic to skillet.

5. Saute chicken and garlic 4-5 minutes or until chicken is cooked through.

6. Stir in the coarsely chopped artichoke hearts. Cook 15 seconds to warm artichoke hearts. Remove from heat.

7. Place pre-baked pizza crust on baking sheet.

8. Arrange vine-ripened tomato slices on pizza crust.

9. Spoon chicken and artichoke pieces onto pizza crust.

10. Sprinkle with dried basil leaves.

11. Top with shredded mozzarella cheese.

12. Bake 12 to 15 minutes or until cheese begins to bubble and brown.

Garlic can also be found in jars, in whole clove, minced, crushed and roasted varieties. Garlic is gaining in popularity and new garlic products are finding their way onto supermarket shelves.

Artichoke Hearts

Artichoke hearts are the core of the artichoke after the outer leaves and tough stem has been trimmed away. The hearts can be cut from raw artichokes but are more commonly purchased in jars along with other canned and preserved vegetables.
