Chicken Pizza with Caramelized Onion and Gorgonzola Cheese

 

 

Readymade pizza dough topped with thinly sliced Vidalia onions, cooked chicken breast and gorgonzola cheese. Pizza is baked in hot oven until onion has softened and cheese has melted.

Ingredients -
2 tablespoons Unsalted Butter
2 large Vidalia Onions, thinly sliced
2 teaspoons Granulated Sugar
1/2 pound Boneless, Chicken Breasts, cooked and diced
1 (10 ounces) package Refrigerated Pizza Dough
1 pound Gorgonzola Cheese, crumbled
 
Preparation:

1. Add unsalted butter to skillet. Melt over medium heat.

2. Add onions to skillet and saute until onions have become soft and brown.

3. Stir granulated sugar into onions. Saute additional minute.

4. Preheat the oven to 425 degrees F.

5. Spray baking sheet with cooking spray. Follow directions on refrigerated dough package and press to desired thickness.

6. Arrange onions and chicken over pizza dough.

7. Top with crumbled Gorgonzola cheese.

8. Bake the pizza 10 to 12 minutes, or until done.

Vidalia onions are considered a sweet onion. The soil they are grown in contains low amounts of sulfur and the resulting onion has less sulfur. This means the onion has less pungency and a sweeter natural flavor. Sweet onions are often eaten raw in salads.
