Chicken Pizza with Pesto Sauce, Roasted Red Peppers and Fresh Asparagus

 

 

Refrigerated pizza dough topped with sautéed chicken breast, thinly sliced onion, minced garlic, fresh basil pesto, asparagus spears, roasted red peppers, mozzarella cheese and crumbled feta cheese. Pizza is baked in hot oven until the crust edges are lightly browned and the cheese has melted.

Ingredients -
3/4 pound Boneless, Skinless, Chicken Breast, cooked and diced bite-sized
1/2 cup thinly sliced Red or White Onion
2 Garlic Cloves, minced
2 tablespoons Extra Virgin Olive Oil
4 tablespoons Fresh Basil Pesto, divided
Olive Oil spray
1 (10 ounces) package Refrigerated Pizza Dough
4 thin Fresh Asparagus Spears cut in 1-inch pieces
1 cup chopped Roasted Red Bell Peppers
1/2 cup Shredded Mozzarella Cheese
1 ounce crumbled Feta Cheese
 
Preparation:

1. Preheat the oven to 400 F.

2. Add olive oil to non-stick skillet.

3. Saute chicken breast pieces with thinly sliced onion and minced garlic, until chicken is browned.

4. Remove skillet from heat. Stir in 2 tablespoons fresh basil pesto.

5. Spray large baking sheet with olive oil spray.

6. Press dough onto baking sheet to thickness desired.

7. Spread 2 tablespoons fresh basil pesto over dough, avoiding edges.

8. Spoon the chicken mixture over dough and spread evenly. Top with asparagus spears and roasted red bell peppers.

9. Sprinkle shredded mozzarella cheese and crumbled Feta cheese over the top of chicken and vegetables.

10. Bake pizza 12 to 15 minutes or until cheese has melted and crust edges are lightly browned.

Mozzarella Cheese

High moisture or fresh, and low moisture Mozzarella cheese have distinctly different melting points and characteristics. Low moisture Mozzarella is produced from skim milk, while fresh, high moisture Mozzarella is produced from Buffalo’s milk.
