Greek-Style Pizza with Sun-Dried Tomatoes, Kalamata Olives, and Feta Cheese

 

 

Pre-baked pizza crust spread with mixture of real mayonnaise, crushed garlic, and Feta cheese topped with sun-dried tomatoes, Kalamata olives, and dried oregano. Pizza is baked until heated through topped with fresh spinach, Feta cheese and returned to oven to complete baking.

Ingredients -
1/2 cup Real Mayonnaise
4 Garlic Cloves, crushed
1 cup Crumbled Feta Cheese, divided
1 (12-inch) Pre-Baked Pizza Crust
1/2 cup Oil-Packed Sun-Dried Tomatoes, coarsely chopped (reserve 1 tablespoon oil)
1/4 cup Pitted Kalamata Olives, coarsely chopped
1 teaspoon Dried Oregano
2 cups Fresh Baby Spinach Leaves
1 small Red Onion, trimmed, halved and very thinly sliced
 
Preparation:

1. Preheat oven to 450 F.

2. Place the oven rack in lowest position.

3. Add real mayonnaise, crushed garlic, and ½ cup of the Feta cheese to a small bowl and stir to combine.

4. Spray baking sheet with olive oil spray. Place pre-baked pizza crust on baking sheet.

5. Spread Feta cheese mixture over pizza crust.

6. Arrange sun-dried tomatoes and Kalamata olives over cheese mixture.

7. Sprinkle dried oregano over pizza.

8. Bake 10-12 minutes or until heated through.

9. Add baby spinach to small bowl and toss with reserved sun-dried tomato liquid.

10. Top piping hot pizza with spinach and remaining Feta cheese.

11. Return to oven and bake additional 2 minutes.
