Grilled Canadian Bacon, Monterrey Jack, and Mango Pizza

 

 

Pizza dough rolled and partially grilled to firm and set crust. Crust is removed from grill, flipped, topped with barbeque sauce, shredded Monterrey Jack cheese, Canadian bacon strips and fresh mango slices. Pizza finished grilling, and served hot.

Ingredients -

1 pound Fresh Pizza Dough
1/2 cup Barbecue Sauce
1 cup Shredded Monterrey Jack Cheese
3 ounces Canadian Bacon, cut into strips
1/2 Ripe Mango, peeled and thinly sliced

 
Preparation:

1. Preheat grill to medium heat.

2. Brush large piece of foil with olive oil.

3. Roll out dough into 12-inch circle. Place dough on prepared foil.

4. Place foil with dough on preheated grill rack. Grill 5 minutes.

5. Remove dough from grill. Flip and spread dough with barbeque sauce and shredded Monterrey Jack cheese.

6. Arrange Canadian bacon and sliced mango over cheese.

7. Return pizza to grill and grill about 5 to 7 minutes more.

8. Crust should be lightly browned and cheese melted.

9. Remove pizza to cutting board.

10. Allow pizza to cool slightly before cutting into individual slices.
