Grilled Pizza with Basil Pesto, Mozzarella Cheese and Fresh Tomato

 

 

Fresh pizza dough separated into parts to create four small pizzas. Dough grilled on one side and topped with combination of fresh basil pesto, chopped plum tomato, mozzarella cheese and fresh ground black pepper. Pizzas grilled until mozzarella melts and crusts have firmed.

Ingredients -
Non-Stick Cooking Spray
1 pound Refrigerated Fresh Pizzeria Pizza Dough
1/4 cup Refrigerated Basil Pesto Sauce
3 Plum Tomatoes, seeded and chopped
8 ounces Fresh Mozzarella Cheese, thinly sliced
1/2 teaspoon Coarsely Ground Black Pepper
 
Preparation:

1. Preheat grill for to medium heat.

2. Spray 2 large pizza pans with nonstick cooking spray.

3. Divide dough into 4 equal pieces.

4. Press dough into 1/8-inch thick rounds.

5. Transfer two rounds to each prepared pizza pan. Cover dough rounds loosely with plastic wrap.

6. Place dough rounds on hot grill grate.

7. Cover the grill and cook 2 to 3 minutes or until grill marks appear on underside and dough stiffens.

8. Carefully transfer dough back to pizza pans, grill-marks side up.

9. Spread basil pesto on grilled side of dough rounds.

10. Arrange chopped tomatoes, fresh mozzarella, and fresh ground black pepper over pesto.

11. Return pizzas to grill.

12. Cover the grill and cook pizzas until bottom of dough stiffens and mozzarella begins to melt.

13. Transfer pizzas to cutting board. Cut and serve.

Pizza Cutter

Pizza cutter (also known as a pizza wheel). Buy a pizza cutter that is dishwasher safe so it doesn’t rust. They come in a variety of sizes, so consider the size of pizza that you will make most often. You may opt to purchase a rocking pizza knife instead, as it can be re-sharpened.


Pizza Making Tips
Grilling

When the dough rounds are lightly browned, put the toppings on and turn down the heat. If you’re using charcoal, make sure that one side is hotter so you can put the topped pizza on the cooler side. If you’re using heavier toppings, grill them a little before adding them to the pizza.
