Grilled Sweet and Sour Chicken Pizza with Pineapple

 

 

Boneless, skinless chicken breasts coated with BBQ marinade and grilled. Pizza dough rolled and pressed into pizza pan. Dough topped with sliced grilled chicken, sliced onion, and pineapple pieces. Pizza drizzled with BBQ marinade and sprinkling of shredded cheddar and Monterrey Jack cheese blend and baked in hot oven.

Ingredients -

3/4 pound Thin Cut Boneless Skinless Chicken Breasts
6 tablespoons Sweet and Sour BBQ Marinade
1 pound Pizza Dough, room temp
2 cups Shredded Cheddar and Jack Cheese Blend
1/2 Small Onion, peeled, halved, sliced
1 cup Pineapple Tidbits, drained

 
Preparation:

1. Coat the chicken breasts with 2 tablespoons of the bbq marinade.

2. Grill the chicken on a hot grill pan for 6 minutes, turning halfway through cooking time.

3. Slice the cooked breasts into strips and set aside.

4. Preheat the oven to 500 degrees.

5. Spray a pizza pan with nonstick cooking spray.

6. Roll out the dough onto a floured work surface.

7. Roll the dough into a 14 inch circle and place on the prepared pizza pan.

8. Sprinkle the top with 1 ½ cups of cheese.

9. Layer the pizza with the chicken, onion and pineapple.

10. Drizzle the remaining marinade on top and sprinkle the remaining cheese over that.

11. Bake until golden brown, which takes about 18 minutes.

12. Remove from the oven and cool slightly before slicing.

13. Serve immediately.
