Ground Beef, Mozzarella, and Basil Tortilla Pizza

 

Tortillas topped with mixture of seasoned and browned ground beef and onions, chopped vine-ripened tomato, shredded mozzarella cheese, grated fresh Parmesan cheese, and fresh basil leaves. Tortillas are baked until light brown and cheese has melted.

Ingredients -
1 pound Lean Ground Beef
1 medium White or Yellow Onion, chopped
1 teaspoon Dried Oregano Leaves
1 teaspoon Coarse-Grained Salt
4 (10-inch) Flour Tortillas
1 medium Vine-Ripened Tomato, seeded and chopped
1 tablespoon thinly sliced Fresh Basil Leaves
1 cup shredded Mozzarella Cheese
1/4 cup grated Fresh Parmesan Cheese
Extra Virgin Olive Oil
 
Preparation:

1. Preheat the oven to 400 degrees.

2. In a skillet over medium heat, brown the onion and ground beef.

3. Pour off the excess fat.

4. Add the oregano and salt to the beef mixture.

5. Lightly brush tortillas with oil.

6. Add the tortillas to 2 large baking sheets and bake in the oven for 3 minutes.

7. Spoon the beef mixture evenly over top of each tortilla.

8. Divide the tomato, basil and cheese evenly between the tortillas and sprinkle on top.

9. Return to the oven and bake for 12 to 14 minutes or until tortillas are lightly browned.
