Italian Sausage and Arugula Pizza with Onions and Peppers

 

Pre-baked thin pizza crust topped with cooked Italian sausage, thinly sliced white onion, fresh baby arugula, roasted red bell pepper, ricotta cheese, and parmesan cheese.

Ingredients -
8 ounces Hot Italian Sausage, browned, fat drained
1/2 small White Onion, thinly sliced
4 cups Baby Arugula
1/2 cup Roasted Red Pepper Strips
1 large Prebaked Thin Crust Pizza Shell
3/4 cup Ricotta Cheese
1 tablespoon Parmesan Cheese, grated
 
Preparation:

1. Preheat the oven to 450 degrees.

2. In a large saucepan, add the onion and arugula, saute until the arugula has wilted.

3. Stir in the red pepper strips and sausage and heat until warmed.

4. Spread the crust with 1/2 cup ricotta, top with sausage mixture.

5. Make dollops with the remaining ricotta and sprinkle with Parmesan cheese.

6. Bake directly on the oven rack for 8 minutes.

7. Serve and enjoy.

Roasted Red Peppers

Roasting red bell peppers can be done at home on the stovetop, on the grill or under the broiler. The concept is to cook the pepper until the skin turns black, place in a paper bag or other container for a short period of time following the blackening. This process allows the escaping moisture to aid in removal of the skin, leaving the moist, cooked pepper flesh for consumption.
