Mexican-Style Biscuit Pizza with Chicken and Black Beans

 

 

Biscuit dough topped with mixture of cooked chicken, black beans, salsa, and taco seasoning. Chicken mixture topped with chopped green onion, red bell pepper strips, and shredded mozzarella cheese. Pizza baked until crust is golden and cheese has melted. Served with sour cream and guacamole.

Ingredients -

1 can Pillsbury Grands Flaky Biscuits
1 cup diced Cooked Chicken
1 cup Black Beans, drained
1/2 cup Salsa
2 tablespoons Taco Seasoning
2 Green Onions, chopped
1/2 cup Red Bell Pepper strips (1 inch long)
1-1/2 cups Shredded Mozzarella Cheese
Sour Cream and Guacamole, for toppings

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Separate the can of dough into 8 biscuits and each biscuit into a 5-1/2 inch round.

3. Place the dough rounds on an ungreased cookie sheet.

4. Add the next 4 ingredients to a bowl and mix well.

5. Spread the mixture over the biscuits almost to the edge.

6. Sprinkle the green onions, bell pepper and mozzarella cheese on top.

7. Bake until the biscuits are golden and the cheese is melted, which takes about 22 minutes.

8. Serve garnished with sour cream and guacamole.
