Pepperoni Pizza with Basil Pesto and Three Cheeses

 

 

Italian bread topped with fresh basil pesto, ricotta cheese, parmesan cheese, salt, pepper, pepperoni, and mozzarella cheese. Pizza bread is baked until cheese melts and pepperoni is heated through.

Ingredients -
2 (3.5 ounces) each packages Sliced Pepperoni
1/4 cup Grated Parmesan Cheese
2-1/2 cups Ricotta Cheese
2 cups Shredded Mozzarella Cheese
1/2 teaspoon Salt
1/2 teaspoon Pepper
6 tablespoons Homemade Basil Pesto
2 Loaves Italian Bread
 
Preparation:

1. Turn the oven to 450 degrees and preheat.

2. Cut the Italian bread in half lengthwise, then crosswise to make 8 sections.

3. In a bowl, combine the pesto, ricotta, parmesan, salt and pepper.

4. Spread the mixture onto the sections of bread.

5. Top with the pepperoni and mozzarella.

6. Bake for 10 minutes or until the cheese melts.

7. Allow to cool for 5 minutes.

8. Serve with ranch dressing for dipping sauce.

Broiler

Preheat a skillet on the highest heat on the stove for 20 min. Then put the pan under the broiler upside-down. Put the pizza on top of the upside-down pan under the broiler for 1 minute and 35 seconds. The pizza will have charred edges and be chewy inside.
