Pizza Cordon Bleu

 

 

Twist on classic dish. Onion, mushroom, and bell pepper roasted in oven until tender. Readymade pizza crust topped with mixture of reduced-fat sour cream and Dijon mustard. Chicken and ham pieces arranged over sauce. Oven roasted vegetables layered over meats. Shredded Swiss cheese sprinkled over vegetables. Pizza is baked in hot oven until crust is golden and Swiss cheese has melted.

Ingredients -

1/4 cup Thinly Sliced Yellow Onion
1/2 cup Thinly Sliced Red Bell Pepper
1-1/2 cups Pre-Sliced Fresh Button Mushrooms
1 Prepared Pizza Crust
2 tablespoons Dijon Mustard
1/4 cup Reduced-Fat Sour Cream
3/4 cup Cooked Chicken Breast Pieces
3/4 cup Deli Ham Chunks
1 cup Shredded Swiss Cheese

 
Preparation:

1. Turn the oven to 450 degrees and preheat.

2. Peel and slice the onion and place in a 2 quart microwave safe dish.

3. Top with the pepper and mushrooms and cover with plastic wrap, venting one corner.

4. Cook until the vegetables wilt and release their juices, which take about 3 minutes.

5. Place the pizza crust on a baking sheet.

6. In a small bowl, combine the sour cream and mustard and mix well.

7. Spread the mixture over the crust.

8. Cut the chicken and ham into small pieces and sprinkle onto the crust.

9. Drain the liquid from the veggies and sprinkle on top of the pizza.

10. Sprinkle the cheese on top and bake for 10 to 12 minutes or until the cheese is melted.

11. Slice and serve.
