1. Fill a large bowl with warm water and yeast and allow to sit for 5-7 minutes until the yeast dissolves. You may need to stir the yeast at the end to help it to dissolve.
2. Using an electric mixer, add the olive oil, flour, salt and sugar on low speed one minute.
3. Knead until the dough is elastic. If the dough is still wet, add flour accordingly.
4. Place dough in a bowl coated with olive oil. Cover with plastic wrap and allow to sit in a warm place for 1-2 hours. If you would like, you can freeze the dough for later use.
5. Using a pizza stone or large pan, flour the surface and flatten the dough with your fingertips. Stretch the dough as far as possible and allow to sit for 5 minutes before stretching it again.
6. When the dough is at the desired diameter (approximately 10 inches), brush the dough with olive oil.
