Tex-Mex Pizza with Chicken and Peppers

 

Boboli pizza crust topped with chunky salsa, diced cooked chicken breast, kidney beans, red and green bell pepper, thinly sliced red onion and Monterey Jack cheese.

Ingredients -
1 Large Boboli Pizza Crust
1 cup Thick & Chunky Salsa
2 cups Chicken, cooked, diced
1 can Kidney Beans, (14.5 ounce), drained
1 Red Bell Pepper, seeded and thinly sliced
1 Green Bell Pepper, seeded and thinly sliced
1 Red Onion, peeled and thinly sliced
2 cups Monterey Jack Cheese, shredded
 
Preparation:

1. Preheat the oven to 450 degrees.

2. Place the Boboli on a baking sheet.

3. Spread the salsa evenly over the crust.

4. Sprinkle the pizza with the diced chicken, beans, peppers and onion.

5. Sprinkle the shredded cheese evenly over the crust.

6. Bake for 15 minutes or until the cheese is melted.

7. Cut and serve hot.

This Mexican style pizza enjoys a little kick from the salsa. For added heat, carefully dice some habanero, serrano, or jalapeno peppers and stir into the salsa before topping your pizza.
