Zucchini Pizza

 

 

Unique twist on pizza. Crust prepared from shredded zucchini, cooked rice, shredded mozzarella cheese, grated fresh Parmesan cheese, and egg. Crust is baked in hot oven to set. Filling prepared from ground beef, chopped onion, spaghetti sauce, and coarse grained salt. Filling spread over crust and topped with shredded cheddar cheese. Pizza is baked in hot oven until cheese has melted.

Ingredients -

Crust:
4 cups Shredded Peeled Zucchini, drained and pressed dry
2 cups Cooked Rice
1-1/2 cups Shredded Mozzarella Cheese
1 cup Grated Fresh Parmesan Cheese
2 Large Eggs

Filling:
1 pound Ground Beef
1 Medium Chopped Onion
1-1/2 cups Spaghetti Sauce
1 teaspoon Dried Oregano
1/2 teaspoon Coarse-Grained Salt
2 cups Shredded Cheddar Cheese

 
Preparation:

1. Turn the oven to 400 F degrees and preheat.

2. In a large bowl, combine the zucchini, rice, mozzarella, parmesan cheese and eggs and mix well.

3. Press the crust into a 15 x 11 inch jelly roll pan.

4. Bake until lightly brown, which takes about 23 minutes.

5. Add the ground beef and onion to a large skillet and brown until cooked through.

6. Drain the excess fat and add to a large bowl.

7. Add the spaghetti sauce, oregano and salt and mix well.

8. Pour the mixture over the crust and spread out evenly.

9. Sprinkle the cheese on top and bake for 15 minutes.

10. Let stand 5 minutes before cutting and serving.
